A hearty, cheesy, and savory one-pan meal featuring tender potatoes, smoked sausage, and creamy ranch flavor — perfect for busy weeknights or comforting family dinners.
1 lb smoked sausage, sliced into coins
4 medium russet potatoes, peeled and diced
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 packet ranch seasoning mix (or 3 tbsp homemade mix)
2 tbsp olive oil
1/4 cup sour cream
2 tbsp chopped green onions (for garnish)
Salt and pepper to taste
1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
2. In a large bowl, toss the diced potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.
3. Spread the potatoes evenly onto the prepared pan and bake for 25 minutes, stirring halfway through.
4. Add the sliced smoked sausage to the pan and continue baking for another 15 minutes, or until the potatoes are tender and golden.
5. Sprinkle both cheeses evenly over the top and bake for 5–7 minutes more, until melted and bubbly.
6. Remove from the oven and let cool for a few minutes. Dollop with sour cream and sprinkle with green onions before serving.
For a lower-carb option, substitute potatoes with cauliflower florets.
Add diced bell peppers or onions for extra flavor and color.
This dish reheats well — store leftovers in an airtight container and warm in a skillet or oven.
