A cheesy, savory crescent roll breakfast casserole packed with bacon, eggs, and vegetables—easy to assemble, irresistibly creamy, and perfect for feeding a crowd.

Ingredients

8 large eggs, beaten

2 cups shredded cheddar cheese (sharp recommended)

1 pound bacon, cooked and crumbled

1 cup milk

1 cup cottage cheese

4 green onions, thinly sliced

1 red bell pepper, diced

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

1 can refrigerated crescent rolls

Instructions

1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish. Unroll crescent roll dough and press into the bottom of the dish, sealing perforations. Pre-bake for 5 minutes if desired.

2. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth and well combined.

3. Fold in crumbled bacon, shredded cheese, diced bell pepper, and green onions. Add garlic powder, onion powder, salt, and pepper, stirring gently to combine.

4. Pour the egg mixture evenly over the crescent roll crust.

5. Bake for 30–35 minutes, until the center is set and the top is golden brown. Let cool slightly before slicing and serving.

Notes

For extra flavor, try adding diced ham, jalapeños, or sautéed mushrooms.

Whole milk creates the creamiest texture, but lower-fat milk can be used if needed.

Allow the casserole to rest for a few minutes before cutting for cleaner slices.
