1 pound kielbasa sausage, sliced into 1/2-inch rounds
1 fresh pineapple, cored and cut into 1-inch chunks (or 1 can pineapple chunks, drained)
1/3 cup brown sugar, packed
1/4 cup pineapple juice
2 tablespoons soy sauce
1 tablespoon Dijon mustard
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch mixed with 2 tablespoons water
Wooden toothpicks or small skewers
Fresh chopped parsley or green onions for garnish
1. In a medium saucepan, combine brown sugar, pineapple juice, soy sauce, Dijon mustard, garlic, and red pepper flakes. Simmer over medium heat, stirring to dissolve sugar.
2. Whisk in the cornstarch mixture and cook 2–3 minutes until glaze thickens.
3. In a large skillet over medium-high heat, cook kielbasa slices for 5 minutes until edges brown.
4. Pour glaze over kielbasa, stir to coat, and simmer 3–5 minutes until thickened.
5. Thread one piece of kielbasa and one pineapple chunk onto each toothpick. Arrange on a platter, drizzle with remaining glaze, and garnish with fresh herbs.
