Soft, buttery Christmas cookies decorated with festive green and white icing.
2 1/2 cups all-purpose flour
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp baking powder
1/4 tsp salt
2 cups powdered sugar
2–3 tbsp milk
Green food coloring
White food coloring or none for white icing
Sprinkles (optional)
1. In a large bowl, cream together butter and sugar until light and fluffy.
2. Beat in the egg, vanilla, and almond extract.
3. Whisk together flour, baking powder, and salt, then add to the wet ingredients and mix to form a soft dough.
4. Shape dough into a disc, wrap in plastic, and chill for at least 1 hour.
5. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
6. Roll dough to 1/4-inch thickness and cut into festive shapes.
7. Bake cookies for 8–10 minutes, until edges are just set.
8. Cool completely before decorating.
9. Whisk powdered sugar with milk to form a smooth icing.
10. Tint half the icing green; leave the rest white.
11. Pipe or spread icing onto cookies and add sprinkles if desired.
12. Allow icing to set before storing.
Chilling the dough helps cookies keep their shape.
Add more powdered sugar for thicker icing or more milk for thinner icing.
Cookies can be stored in an airtight container for up to 5 days and freeze well.
