These fudgy Red Velvet Brownies with a creamy cheesecake swirl are rich, vibrant, and incredibly easy to make. They deliver classic red velvet flavor with half the effort of a layered cake, making them perfect for Valentine’s Day or anytime you want an impressive dessert fast.

Brownie Base:

½ cup unsalted butter, melted

1 cup granulated sugar

2 large eggs, room temperature

2 tsp vanilla extract

¼ cup unsweetened cocoa powder

2 tbsp red food coloring (gel preferred)

1 tbsp white vinegar

¾ tsp fine sea salt

1 cup all-purpose flour

½ cup white chocolate chips

Cream Cheese Swirl:

4 oz cream cheese, softened

2 tbsp granulated sugar

1 large egg yolk

½ tsp vanilla extract

Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper and lightly grease.

2. Whisk melted butter and sugar together until combined.

3. Add eggs one at a time, mixing well after each addition.

4. Stir in vanilla, cocoa powder, red food coloring, and vinegar until smooth.

5. Gently fold in salt and flour until just combined.

6. Fold in white chocolate chips, reserving some for topping.

7. Beat cream cheese and sugar until smooth, then mix in egg yolk and vanilla.

8. Spread brownie batter into prepared pan.

9. Drop spoonfuls of cream cheese mixture on top and swirl gently with a knife.

10. Sprinkle remaining white chocolate chips over the top.

11. Bake 25–30 minutes until a toothpick inserted shows moist crumbs.

12. Cool completely before slicing for clean edges.

Notes

For deeper flavor, substitute dark chocolate chips.

Brownies slice best after cooling at least 1 hour.

Store refrigerated up to 4 days for best texture.
