4 large eggs, room temperature

¾ cup granulated sugar

1 teaspoon vanilla extract

2–3 drops red food coloring

1 cup cake flour, sifted

1 teaspoon baking powder

¼ teaspoon salt

Powdered sugar, for dusting

1½ cups heavy whipping cream

1 tablespoon strawberry preserves (optional)

Fresh strawberries, thinly sliced (optional)

Instructions

1. Preheat oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment.

2. Beat eggs until thick and pale, then gradually beat in sugar until ribbons form.

3. Stir in vanilla and food coloring.

4. Fold in flour, baking powder, and salt just until combined.

5. Spread batter evenly in the pan and bake until the cake springs back when touched.

6. Turn cake onto a powdered-sugar-dusted towel, remove parchment, and roll up while warm.

7. Cool completely in rolled position.

8. Whip cream with powdered sugar and vanilla until stiff peaks form.

9. Unroll cake, spread filling evenly, and add strawberries if desired.

10. Re-roll, cut diagonally, and arrange pieces into a heart shape.

11. Chill briefly before slicing and serving.

Notes

Be gentle when folding the batter to keep the cake light.

Rolling the cake while warm helps prevent cracking.
