Cheesy, hearty, and low-carb, this Keto Beef and Broccoli Casserole is the perfect weeknight dinner or meal prep recipe.

Ingredients

1 lb ground beef

3 cups broccoli florets (fresh or frozen, steamed)

4 oz cream cheese, softened

1/2 cup heavy cream

1 1/2 cups shredded cheddar cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

Instructions

1. Preheat oven to 375°F (190°C).

2. Brown ground beef in a skillet with garlic powder, onion powder, salt, and pepper.

3. Steam broccoli until just tender, then drain well.

4. Stir cream cheese and heavy cream into cooked beef until creamy.

5. Add broccoli to the beef mixture and combine.

6. Transfer mixture to casserole dish and top with cheddar cheese.

7. Bake uncovered for 20–25 minutes, until golden and bubbly.

8. Cool for 5 minutes before serving.

Notes

You can substitute ground turkey or chicken.

Use mozzarella, gouda, or Monterey Jack for different flavors.

Store leftovers in fridge up to 4 days or freeze up to 2 months.
