A cheesy, hearty keto ground beef casserole ready in under 30 minutes. Perfect for busy weeknights or meal prep.
1 lb ground beef (80/20 recommended)
1 cup shredded cheddar cheese
1/2 medium onion, diced
2 cloves garlic, minced
1 cup chopped zucchini (or spinach)
4 oz cream cheese (or 1/2 cup heavy cream)
1 tsp paprika
1/2 tsp dried oregano
Salt and pepper to taste
1 tbsp olive oil or butter
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spatula.
3. Add diced onion and garlic to the skillet, cooking until softened.
4. Stir in zucchini (or spinach) and cook 2–3 minutes to release moisture.
5. Reduce heat and mix in cream cheese (or heavy cream), paprika, oregano, salt, and pepper until creamy.
6. Transfer mixture to a greased 9×9-inch baking dish. Top evenly with shredded cheddar.
7. Bake 10–12 minutes, until cheese is melted and bubbly.
8. Let rest 5 minutes before serving.
You can swap cheddar for mozzarella or pepper jack for a different flavor.
To freeze: cool completely, portion into airtight containers, and freeze up to 2 months.
