A bold and creamy Cajun Tortellini dinner made with smoky sausage, tender cheese-filled pasta, and colorful peppers all tossed in a rich Parmesan cream sauce. An irresistible one-pan meal with big flavor.
16 oz fresh cheese tortellini
1 lb Cajun-style smoked sausage, sliced into rounds
2 tablespoons olive oil
1 medium onion, finely diced
3 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 tablespoons Cajun seasoning (adjust to taste)
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
Optional: 1/4 teaspoon red pepper flakes
1. Bring a large pot of salted water to a boil for the tortellini.
2. Heat olive oil in a large skillet over medium heat and brown the sliced sausage for 5–7 minutes. Remove excess grease if needed.
3. Add diced onion to the skillet and sauté about 3 minutes until translucent. Add garlic and cook 30 seconds until fragrant.
4. Add sliced bell peppers and cook 4–5 minutes until slightly softened.
5. Stir in Cajun seasoning, then pour in chicken broth, scraping up browned bits. Simmer for 2 minutes.
6. Cook tortellini according to package directions until al dente and drain.
7. Add heavy cream to the skillet and bring to a gentle simmer, then stir in Parmesan until melted.
8. Add tortellini to the sauce and toss gently to coat evenly.
9. Garnish with fresh parsley and serve immediately.
For a lighter version, substitute chicken sausage.
Plant-based sausage works well for a vegetarian option.
