2¼ cups all-purpose flour
1 package (3 oz) strawberry-flavored gelatin
1 tsp baking powder
½ tsp salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
½ tsp strawberry extract (optional)
2–3 drops red food coloring (optional)
48 chocolate kisses, unwrapped
For rolling:
½ cup granulated sugar
1. Whisk flour, strawberry gelatin, baking powder, and salt in a medium bowl.
2. Beat butter and sugar until light and fluffy, about 3 minutes.
3. Add egg, vanilla, and strawberry extract if using, and mix well.
4. Gradually add dry ingredients and mix until just combined.
5. Add food coloring if desired and mix briefly.
6. Cover dough and chill for 30 minutes.
7. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
8. Roll dough into 1-inch balls and roll in granulated sugar.
9. Place cookies 2 inches apart and bake 10–12 minutes until edges are set.
10. Immediately press a chocolate kiss into the center of each cookie.
11. Cool 5 minutes on the pan, then transfer to a wire rack to cool completely.
Do not overbake; cookies should remain soft in the center.
Press kisses in gently so they do not crack.
